Saturday – Valentine’s Day Dinner: Lamb Chops for Hubby, Tilapia for me, Fingerling Potatoes, Spinach with Garlic, Asparagus with Sundried Tomatoes
Sunday – salads
The spaghetti had diced veggies in it. It was super yummy. I used carrots, celery, garlic, onion and fresh tomato. The spiced beef was surprising. I used some sweet & tangy bbq rub, red wine, apple juice, garlic, onion and corriander. I used a pot roast. Once it had cooked for many hours, I shredded it with two forks and we ate it as wraps with sour cream. I had a head of cauliflower and one of cabbage. I sliced them into huge wide chunks and layed them on a pan. I used juice from the crockpot and heated it with butter in a fry pan until it reduced, then I poured it over the veggies and baked them at 400F for 20 minutes. The bits of onion and garlic caramelized and the veggies were divine! The banana bread was scrumptious. I seasoned it with all-spice and cinnamon. I added a few pistachios, because we had them and I love them. It turned out perfectly!
The Valentine’s Day dinner was a homemade deal. Hubby loves lamb, and I hate it. I love fish, and he hates it. We both love spinach and asparagus, but the kids hate them. So we wanted to eat stuff that we never have at home. It all turned out super yummy and we ate until we were very full!
This was one of the best weeks of home made food ever!
