Monday – crockpot pulled pork, red potatoes, green peas
Tuesday – mac-n-cheese, leftover veggies
Wednesday – london broil, spinach, broccoli, baked french fries
Thursday – ham, sweet potatoes, mixed leftover veggies
Friday – chili with rice and cheese and sour cream
Saturday – leftover chili
Sunday – Italian food at Scalini’s
The fresh spinach made the best side dish. I sautéed some chopped garlic and then chopped the spinach and added it to it, a dollop of butter and some salt and pepper for taste and it was FABULOUS. The pulled pork was scrumtious, which is as usual. Hmm. The london broil turned out really well. I haven’t felt particularly inspired by anything we ate this week except the spinach.
For the chili this time, I went extra homemade. I used dry red beans to start. I used one pound each of ground sausage and ground beef. I used fresh onion and fresh tomato. I did used store bought chili powder and we do not make our own cheese or sour cream. Something turned out different about it this time. It tasted less chili-like and more soup-like. But we all ate it anyway. Even the kids. I seem to be on a roll lately with getting the kids to eat 🙂
My sister is very pregnant. She found an Atlanta Legend for pregnant people. A restaurant that claims that hundreds of women have gone into labor within 48 hours of eating their famous eggplant parmesan. So, a group of us are having dinner with her there tonight. We’ll see how it goes.
